Fritter with eggplants-Traditional Mediterranean Food-Greek Kitchen January 30, 2008


You can have thousands different healthy dishes with eggplants!Whole Mediterranean region have a lot different recipe with eggplants!

FRITTERS with EGGPLANTS
traditional Greek and Croatian Food

Integrates:

  1. 500 gram of dark farina tip 400
  2. 1 pack of instant yeast
  3. 1 tea spoon of sea salt
  4. 1 table spoon of olive oil
  5. 2 eggs
  6. 2 eggplants/for better results you have to cut eggplants on small parts and add sea salt,mix it and leave it for 2 hours/
  7. 1 tea cup of yogurt
  8. warm water
  9. 1 tea spoon of paper and sweet red grounded paprika

Prepare:

  • put farina in big pot
  • add yeast ,salt,paper and sweet red paprika
  • mix it with spoon
  • add eggs,olive oil
  • add colander-ed ,cut and salted eggplants/eggplants have to be cat in small parts/
  • add yogurt and add warm water /little by little/ and mix it well with spoon
  • wait about 1 hour and start with fry in deep warm oil/just as you fry donuts/
  • serve it warm with white cheese or sour cream with cut fresh green onion

Goce is from Macedonia and I will share with you, a nice recipe for Lamb and Eggplants in oven/this is one traditional Macedonian recipe/

Lamb and Eggplants in oven

You need:/for 6/

  1. one nice lamb ham/about 2,5 kg/
  2. 4 pc. of eggplants
  3. parsley and garlic/cut in small parts/
  4. 1 tea cup of sunflower oil or olive oil
  5. salt and paper
  6. 2 pc.of sweet red paprika

Prepare:

  • fry lamb ham in big pot on all sides while became gold
  • in warm oven put fried lamb with eggplants cut in to parts
  • add salt and parsley on eggplants with few drops of oil,and just a little bit of paper
  • on this eggplants put lamb meat/you have to salt it/
  • add sweet red paprika cut in small parts
  • add just a little warm oil on all
  • bake it in oven on lower temperature/160 Celsius /or 1 and half hour
  • serve it warm with Red Macedonian wine
