New Year Dinner-Black risotto with sepia-Italian risotto December 31, 2007

Hello dear friends,some of you will be at home with family and friends!if you like sea food you will love this traditional Black risotto!

BLACK RISOTTO-RISOTTO WITH SEPIA

You need:

  1. 1kg fresh sepia
  2. 1/2 kg red onion
  3. cut garlic and parsley
  4. salt and paper
  5. 1 tea cup of olive oil
  6. 1 tea cup of red wine/Merlot or similar/
  7. 1 tea spoon of sugar
  8. 3 tea cup raise/round for risotto/

PREPARATION:

  • cut red onion and put in on warm olive oil and wait until became gold
  • on gold onion put sepia/cut in small part with black from sepia/
  • mix it well on middle fire for 10 minutes
  • now add red wine and cut garlic with parsley
  • mix it more 5 minutes
  • leave it cook on middle fire for 15 min.
  • now add raise and salt and parer and 2 glass of water or 9 tea cup of water/rule:on 1 dose of raise add 3 dose of water
  • mix all until raise drink up all water
  • when raise is cooked add little olive oil and cover it
  • wait 10 min. and serve it!
